Cooking With Que’s Easy Vegan Meatloaf

Just know that the recipe is simple.  Anyone can make this, and it’s a living recipe so add what you want.  If my husband wasn’t allergic to onions.. I would add them.

I wish I could tell that this recipe came about in some fancy way.. but the truth is… I was craving meatloaf? Like for 3 weeks, All I could think about was fricking Meatloaf! I am all about the texture so I wanted it to match my thought process of this ole school recipe.  I looked in my freezer and there it was.. Beyond Beef, a plant-based ground beef substitute that works in any recipe that calls for ground beef. It’s soy, gluten, & GMO free.

So it began! In the end, my vegan meatloaf was straight fire.   I loved it so much we made it on Fox 2 Detroit!  Watch it Here!

Easy Vegan Meatloaf

I am all about the texture so I wanted it to match my thought process of this ole school recipe.  I looked in my freezer and there it was.. Beyond Beef, lol… so it began!

Ingredients
  

  • Beyond Beef
  • 1 cup stuffing mix crumbled
  • 1-2 cups Vegetable Broth low to no sodium
  • 1/4 cup Onions
  • 2 sprigs Rosemary
  • 1 sprig Sage
  • 4 cloves Pepper Blend Seasoning
  • Fresh Garlic (to taste)
  • 2 tbsp BBQ Sauce
  • 2 tbsp Grey Poupon
  • 2 tbsp Ketchup

Instructions
 

  • Preheat your oven to 400 degrees.
  • Combine Stuffing and Beyond Beef.
  • Add seasoning and herbs and mix by hand (use a glove if you are like me and don't like things getting in your nail).
  • Add Veggie Broth (and onions if you are feeling fancy)Mix again, It should be more solid than loose, because you want it to bind together, and form this lovely design of a loafIt's sure to smell phenomenal by now.
  • Spray your pan with nonstick spray.
  • Once you have molded that baby into a little loaf.. or Football (lol) place it in the pan and let it cook for 20 mins.
  • While it is cooking in another bowl mix your ketchup, bbq sauce, and grey poupon.
  • Once the Meatloaf has cooked for 30 mins, take it out, and pour the sauce on top, and let it cook for another 10 minutes.
